Kelvin Osmary Pineda Domínguez oversees Finca Jiote, located in Los Andes, Piedras Amarillas, Las Vegas, Honduras, at about 1,750 metres above sea level (14.9008139, -88.09863611111). Raised in a family that cultivated both coffee and vegetables, Kelvin assumed primary responsibility for his siblings and mother following his father’s tragic passing in 2010. He returned to coffee in 2017 after purchasing land from his father-in-law, where he has focused on specialty coffee with positive financial results.

Currently farming 3.8 hectares and expecting 150 quintals, Kelvin employs eight permanent staff. Pacas forms the primary lot, while Parainema, Bourbon, and SL28 grow on other parcels. He uses high levels of shade, complemented by organic matter like gallinaza and coffee pulp, and an NPK-based fertiliser formula supplemented with zinc and calcium. Cherries are selectively picked, depulped the same day, and undergo 16 hours of dry fermentation before washing. The beans then spend approximately 15 days in a parabolic solar dryer, with hand-sorting to remove defects. Kelvin initially stores his coffee at home, subsequently delivering it to Exportadora San Vicente for final processing. Wastewater is directed to a dedicated pit, and pest control includes collecting all ripe cherries to limit infestation. Although prolonged rains and temperature fluctuations have affected harvest and drying, Kelvin remains steadfast in his commitment to producing high-quality coffee.
