El Divisio is the family farm of Nestor Lasso, who might be familiar to some of you because it was one of our most popular coffees a couple years ago when it won coffee of the year at Helsinki Coffee Festival. Nestor and his family have for a long time been at the forefront of the recent natural, anaerobic and wild fermentation frontier in Huila, Colombia. The variety this time is a little more unique, Ombligon is more commonly used in Brazil, but it also grows well in Colombia. The lush jungles and volcanic soil at El Divisio compliment the variety well and Nestor’s precise drying protocols bring out the best this coffee has to offer.
