Tuang Coffee
Tuang Coffee is based on Flores Island in Indonesia’s Manggarai region. Founded by Andre Tuang in 2014, the company was created to help local farmers receive fairer prices for their coffee while focusing on high-quality specialty coffee production. Today, Tuang Coffee works with more than 2,500 farmers, providing training, pre-financing, and support for community projects. Coffee is grown in the mountainous highlands under healthy natural conditions, with farmers using coffee pulp, leaves, and dried grass as organic fertilizer.
What is Dark Room Processing?
This coffee is produced using an anaerobic natural process, where whole coffee cherries are fermented in an oxygen-limited environment. At Tuang Coffee, the cherries are placed in lined bags and moved into a dark room for fermentation. The stable, light-free environment helps control the fermentation process and encourages the development of sweet, fruit-forward flavours. Once the desired fermentation level is reached, the coffee is dried on raised beds for 6–8 weeks before milling and final sorting.
