Dulce Misterio, is a coffee producer that we have had coffees from before and in fact we have had this same variety last year and it was excellent. Mario Duque goes through extensive measures to make sure that each variety is picked at its perfect ripeness. The staff at Dulce Misterio are measuring the Brix degrees, which is the amount of sucrose present in each cherry. All the varieties will reach their max sugar values at different times each season, so it is important to pick each variety exactly when it is at peak ripeness. This Pink Bourbon variety is super intense with fruit and this season seems like the weather was excellent for this variety. The floral components of white flower and the lovely sweetness are really extraordinary. The Dulce Misterio farm continues to turn our amazon lots of coffee and this year is one of the best ever.
